Friday, November 11, 2022 - This year, Chef and Founder Justin Cucci & his Denver Edible Beats restaurants, including Vital Root, are presenting their third annual Thanksgiving at Home, featuring remixed inspiration from their Edible Beats Culinary Universe, including Root Down, Linger, El Five, and Ophelia’s Electric Soapbox. These Thanksgiving at Home offerings are for those that don’t want to fuss in the kitchen, but still want organic, nourishing dishes on their table to enjoy with friends and family this holiday season.

Edible Beats was born in late 2008, and over the last decade plus, has grown into six thriving, nationally recognized and award-winning restaurants, known for thoughtful, vegetable-forward, seasonal and sustainably sourced menus. For the third year, Denverites and their families can bring delicious, gourmet dishes home for the holidays and also support Conscious Alliance, with 5% of Edible Beats Thanksgiving Dinner sales benefiting Stop Hunger In Its Tracks, an organization that fights food insecurity in vulnerable areas.

 

Edible Beats Thanksiving - Available Gluten-Free by Request

Edible Beats presents a full pre-prepared Thanksgiving at Home Menu, offered at $54/person with 7 dishes, including Barber's All Natural Turkeys prepared two ways, Everything Bagel Stuffing, Crispy Brussels Sprouts with Bacon Jam and more. Orders can be placed here by Sunday, 11/20, and picked-up Tuesday, 11/22, or Wednesday, 11/23, or delivered by UberEats.

This year, for the first time, they will present their Everything But the Turkey. If you’ve got plans for the Turkey, but don’t want to fuss with the sides, order Sides for 4 people + 8 Housemade Sweet Potato Rolls, all for $90, see here.

In true Edible Beats fashion, they are offering classic Holiday Pies as well as with a unique spin. 10 Inch Holiday Pies available are layered Pumpkin & Whiskey Pecan Pie, Rye Whiskey Pecan Pie, Classic Pumpkin Pie, Honeycrisp Apple Pie (Sub GF on ANY pie $3, Add Vanilla Bean Whip $5, Add Caramel Sauce $5). Vital Root  Vegan & Gluten Free Thanksgiving

This year’s Vegan & Gluten Free Thanksgiving Dinner from Vital Root is $39 per person and features five dishes, including Roasted Acorn Squash with figs, Sun Dried Tomato Focaccia, Sweet Potato Pumpkin Pie with Coconut Vanilla Cream and more! This year, Edible Beats are donating 5% of Thanksgiving Dinner sales to Conscious Alliance, as they team up with them to Stop Hunger In Its Tracks and help raise their goal of $250K, so they can distribute 500,000 meals across the country. These meals include special delivery of 2,600 turkeys before Thanksgiving to spread some holiday cheer along the way. Conscious Alliance’s ‘Art That Feeds’ began as a concert-adjacent food drive, where thousands of meals were collected at The String Cheese Incident show at The Fillmore Auditorium in Denver, to donate to Pine Ridge Indian Reservation in South Dakota in order to fight food insecurity in vulnerable areas.
