Salt & Straw Unveils Custom Ice Cream Flavor for Hunter Noack’s IN A LANDSCAPE Concert Series in Portland’s Rose Garden

PORTLAND, ORE (June 30, 2025) — Salt & Straw is thrilled to announce a magical new collaboration with pianist and outdoor concert visionary Hunter Noack, debuting a one-of-a-kind ice cream flavor inspired by Scriabin’s Nocturne and created exclusively for IN A LANDSCAPE: Classical Music in the Wild’s upcoming performances in Portland’s International Rose Garden Amphitheater on July 13.

The custom flavor—Black Pepper Honey Lavender with Red Wine Huckleberry Curd and Blood Orange Zest Sprinkles—was imagined by Salt & Straw co-founder Tyler Malek, drawing on Scriabin’s synesthetic color theory, in which musical notes evoke vivid hues. The resulting flavor is layered, romantic, and expressive: think dusky lavender and honey warmed with black pepper, swirled with a lush red wine and wild huckleberry curd, and topped with vibrant housemade sprinkles zested with blood orange.

“Scriabin’s Nocturne is a darkly beautiful, winding piece—and we wanted the ice cream to feel like a flavor you wander into, just like the music,” says Malek. “There’s tension, bloom, warmth, and surprise. It’s something that plays on the senses from every angle.”

“Scriabin believed integration of music with other senses like colored light, taste, and texture could create a powerful psychological resonator for the listener,” said Noack. "To watch Tyler translate the sounds and corresponding colors of Scriabin’s beloved piece Nocturne for the Left Hand, Op. 9, into a dynamic ice cream flavor has been a surreal joy."

Attendees of IN A LANDSCAPE will be among the first to taste the limited-edition creation. The ice cream will be served just as Noack performs Nocturne, roughly 30 minutes into his set, perfectly timed with the music’s emotional peak.

Each pint will feature original label artwork by Hunter Noack—an abstract watercolor composition that mirrors the colors Scriabin mapped to the musical scale, inviting guests to experience music, color, and flavor in a deeply immersive way.
